Crushing for Cupcakes

Here’s a fail proof recipe for light and moist cupcakes by Nigella Lawson.

*The recipe calls for self-raising flour but we’ve included instructions for making your own just in case you don’t have any hanging about in your pantry!!



1 1/2 cups self-raising flour (* For each cup of all-purpose flour add 1 1/2 teaspoons of baking powder and 1/2 teaspoon salt. )

125 g (4 oz) soft unsalted butter
3/4 cup sugar
2 eggs beaten
1 teaspoon vanilla
1/2 cup milk


  1. Sift the flour into large bowl Add all remaining ingredients
  2. Beat with electric mixer for 1 minute until combined
  3. Beat with electric mixer for another 3 minutes or until pale and smooth
  4. Place into pre heated oven180 Celsius 350 F Gas Mark 4 Bake for 15-20 minutes

Serves: Makes 12 cupcakes
