Here’s a fail proof recipe for light and moist cupcakes by Nigella Lawson.

*The recipe calls for self-raising flour but we’ve included instructions for making your own just in case you don’t have any hanging about in your pantry!!

Cupcakes

1 1/2 cups self-raising flour (* For each cup of all-purpose flour add 1 1/2 teaspoons of baking powder and 1/2 teaspoon salt. )

125 g (4 oz) soft unsalted butter
3/4 cup sugar
2 eggs beaten
1 teaspoon vanilla
1/2 cup milk

Method

1. Sift the flour into large bowl Add all remaining ingredients
2. Beat with electric mixer for 1 minute until combined
3. Beat with electric mixer for another 3 minutes or until pale and smooth
4. Place into pre heated oven180 Celsius 350 F Gas Mark 4 Bake for 15-20 minutes

Serves: Makes 12 cupcakes

After nearly two years of planning and two solid months of brainstorming, painting, and most importantly shopping for amazing new product we are sooo proud to say that our new store is now open! Super easy to find, we’re located just down the street from Jammed Lovely at 36 Mill Street West, and we couldn’t be happier. It’s a great location, with stone walls, beautiful hardwood floors, and a large patio which we intend to make great use of in the summer!
We’re specializing in unique, affordable apparel and some funky home decor and accessories. We have to say that it turned out even better than we had hoped.
We will be open 7 days a week 10-6 for now, and later in the summer; similar to our Jammed Lovely hours. We had an amazing Saturday Opening Party and the store was hopping all day long with visitors both local, and from further afield. We think this is the perfect addition to Elora, and when you visit we hope you will too!
